Tasting Notes of citrus, tropical fruit, and hay on the nose, with fine bubble. A "Col Fondo" wine is a style of sparkling wine from the Veneto region of Italy, particularly associated with the Prosecco and Valdobbiadene areas. The name "Col Fondo" translates to "with the sediment," referring to the traditional method of production in which the wine undergoes secondary fermentation in the bottle and is not disgorged, meaning the sediment (lees) remains inside the bottle. The complexity and texture of Col Fondo wines make them versatile with food. They pair well with a range of dishes, from fresh seafood and fried foods to creamy pastas and cheeses. The acidity helps to cut through richer dishes, while the yeastiness adds depth.
Col Fondo wines offer a unique, rustic, and authentic take on sparkling wine, with a fuller mouthfeel and more depth compared to more commercial sparkling wines.
Il Folicello also makes a fantastic pet nat bianco and sparkling red that we carrry at The Breeze. All at affordable prices and great for any bubbly occasion.

In the glass, the wine has a pale golden hue. On the nose, it opens with aromatic notes of ripe stone fruit such as apricotand peach, complemented by a delicate layer of honeysuckle and herbal nuances. There’s also a distinctive mineraledge, evoking the terroir of the region’s clay-rich soils.
